The Santoku Knife

If you find yourself doing lots of chopping and slicing, a santoku knife might be just the knife you need. I was recently slicing raw potatoes using my chef’s knife and the potatoes kept sticking to the blade. I switched to my santoku knife and the problem was solved! This hollow-ground knife has small indents (you can see from above) which create pockets of air between the blade and the food, preventing the food from sticking. Genius!

This inexpensive hand-held knife sharpener is quite amazing. It’s 2-stage sharpening process brings dull knives back to life quickly and easily. A few pulls through the coarse, carbide side will set the edge. Followed by a few pulls through the fine ceramic side to finish the edge. I generally use the fine side of the sharpener most and only use the coarse side when a knife becomes very dull. Remember to rinse the knife after sharpening. I paid about twenty bucks for this and it’s been terrific.
